The Maison Ikkoku cocktail menu is inspired by the ancient Five Elements philosophy —
Metal, Wood, Water, Fire and Earth.
In traditional Eastern thought, these elements represent the fundamental forces that shape nature, transformation and balance. At Maison Ikkoku, this philosophy becomes the creative framework for cocktail design.
Each element expresses a different personality in flavour and aroma:
Metal

The 12 Seat
Cocktail Experience
Maison Ikkoku is intentionally designed around a 12-seat cocktail counter, allowing guests to experience cocktails in their purest form.
Here, the bartender is not hidden behind a bar — the bartender becomes part of the conversation.
Guests can watch each cocktail being built step by step, from the preparation of ingredients to the final garnish. This intimate setting allows for direct interaction with the mixologists, making every visit unique.
In addition to the signature menu, Maison Ikkoku is also known for its bespoke cocktail experience. Guests are invited to share their preferred flavours, favourite spirits or mood of the evening, and the bartender will craft a drink tailored specifically for them.

Maison Ikkoku is the creative vision of Ethan Leslie Leong, one of Singapore’s most recognised mixologists.
With more than two decades of experience in the cocktail and hospitality industry, Ethan has been instrumental in shaping Singapore’s craft cocktail culture. He is the founder of several notable bars including Bar Stories and Maison Ikkoku, and has created cocktails for international celebrities, luxury brands and global events.
Ethan is known for his philosophy that cocktails should be emotionally expressive, visually captivating and technically precise.
His work has also earned him the reputation of a “Gin Composer”, reflecting his ability to craft complex botanical cocktails that showcase the artistry of flavour balance.
